皮料

蕃薯 : 250g
! z: S! o; B0 R) L; M8 G糯米粉 : 200g (过筛)
6 n: z( n9 E. j0 C+ T香兰叶汁 : 50g8 P5 \3 y3 _) {5 R. A* y
椰浆 : 100g7 }+ |+ d2 L7 ^, L# z6 u7 m- n5 g

馅料

椰糖 : 200g (切碎)

沾料

去皮白椰丝 : ½ 粒 (椰丝和盐混均蒸5分钟)7 M+ G' V5 ~3 [" J3 s2 Q
盐 : ½ tsp

方法:) {$ p0 z2 e/ \% `; n
1. 蕃薯削皮, 切薄块, 大火蒸至熟软, 取出, 放进钢盆内, 压烂成泥
9 e+ `0 k1 i0 m/ U6 \2. 加入糯米粉和香兰叶汁拌均. t1 K# u' e% X/ U2 n# @
3. 慢慢加入椰浆搓至光滑粉团
7 Q( ~; r* v: a/ ^4. 把粉团搓成一粒粒的小球, 然后包上馅料
0 a# W: q  i9 [* H, y+ R# g  ^9 e) i5. 把粉团投入已煮开的滚水中, 煮至粉团熟及浮上水面, 捞起, 沾上白椰

250g sweet potatoes% S5 Z" j% k; H3 N- I4 ^
200g glutinous rice flour (sifted)
: K) c. a' ?$ T3 e' ^# b3 q50g pandan juice! _$ o/ ~% G7 A: U( T) s! }& n8 @4 v
100g coconut milk
2 |2 C9 Y' k# J5 t0 q/ @
7 H) Q* h. y. R; T, q: E% q  K" `Filling:
  K  G6 J& H2 _2 ^$ A( R) Q+ @200g gula melaka (chopped)6 f7 p  f5 @" t, V5 c2 r& ^

0 L' I2 ]& X# }* [7 ]To Coat: (mixed, steam for 5 mins)
! \2 [6 Y* @- _" E$ u) [½ grated white coconut* Y  d/ _1 o0 V, _" K) F1 I, U( P
½ tsp salt

/ Q! \6 u* b2 V! XMethod:1 ?/ |2 h/ V# V7 s4 W" N
1. Peel and cut sweet potatoes into 1 cm thick. Steam with high heat& S5 \4 u, P& O( l8 A; F0 h- D" y
until very solf. Put sweet
0 v! w" G0 }  `2 R, b+ jpotatoes into a mixing bowl and mash
4 x3 C# `7 I, d4 K2. Add in glutinous rice flour, pandan juice and mix well, f7 Y3 V& s' R
3. Add coconut milk and knead until it form a soft dough" i% |7 {: u9 K$ N4 V$ l. \7 N, E
4. Form small balls with the dough and fill a little filling inside ang

5. Put into a pot of boiling water and boil until it floats up. Dish
# d" A8 p( D9 p' _8 S. }8 aand drain. Coat with grated white coconut. Serve hot or cold
